Sake production is picking up in Tokyo. That includes the western neighborhood of Sangenjaya, which welcomed new sake brewery and bar Wakaze to the scene July 28.
The brewery is led by an innovative young brewmaster who trained for years at prestigious sake breweries in Akita and Toyama. Wakaze brews several kinds of unrefined sake every day in its four small in-house tanks.
The brewery has also opened a bar, called Whim Sake and Tapas, on its premises. Fresh sake from the brewery is on offer, as are unique tapas from Shonai, Yamagata, where Wakaze’s chief brewer was born.
